Lime & Coconut Friands

These pretty little gluten free lime flavoured friands are lovely, dainty little cakes made with rice flour, egg whites, ground almonds and coconut. Perfect for High Tea.

9
8 medium sized eggs (at room temperature) and we will only be using the whites
2 cups icing sugar
2/3 cup rice flour
2/3 cup ground almonds
2/3 cup dessicated coconut
250 grams butter
2 tablespoons lime zest
2 tablespoon lime juice

Optional - 2 tablespoons extra coconut for decorating
Also Optional - 1/3 cup of fresh or frozen raspberries (approx)
First melt the butter over a low heat and then leave it to cool down. I think for this recipe it’s best to cool it down to just above room temperature, so I melt it before I even get any of the ingredients...
