Loaded Brownie-Like Chocolate Cookies


A Super Duper yummy intense flavored chocolate cookie that has a variety of chips :D And guess what...they are better the next day man! Super soft and ohhhhhh can't explain!!!!!!

1/2 cup (1 stick) unsalted butter, softened to room temperature
1/2 cup sugar
1/2 cup dark brown sugar (or light brown sugar)
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup + 2 Tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1/4 cup + 1 tbsp. white chocolate chips
1/4 cup+ 1 tbsp. semi-sweet chocolate chips
1/4 cup +1 tbsp. butterscotch chips
1/4 cup+ 1 tbsp. milk chocolate chips
Using a handheld or stand mixer, cream the butter on medium speed for about 20 seconds(since it's already super soft). Add the sugars with the mixer running on medium speed. Cream together until light and fluffy. Beat in the egg and vanilla. Scrape down sides of bowl as needed. In a separate bowl; toss together the flour, cocoa powder, baking soda, and salt. Slowly add it to the wet ingredients. Fold in all the chips(the dough will be thick and very sticky). Prepare two baking sheets lined with parchment paper or spray them with baking/cooking spray. Preheat oven to 400F degrees( AND NO, WE WON"T BAKE THEM AT THAT TEMP. It's for when you open oven for cookies to bake, heat won't escape making it less time for baking). Take 1 heaping Tablespoon(I used a cookie scooper that I figured out it was like 1 heaping tablespoon, i'm not sure if it's a small cookie scooper) of dough and place it on baking sheet. Press a few more chips on the tops, if desired(I didn't do that because I wanted a cookie soo badly). Bake for 11 minutes( cookies will look undone and very soft). Cool on cookie sheet for at least 5 minutes before transferring to a wire rack to cool completely or else they might tear apart (they'll still be good to eat though). Cookies stay soft and yummy for up to 7 days!!!
