Loaded Mashed Potatoes with Cheese and Bacon

This comforting side dish uses a few skinny modifications to make mashed potatoes with cheese a little healthier!

1 1/2 lb. russet potatoes, peeled and diced into 1\" cubes
1 tbsp. olive oil
3 oz. reduced-fat cream cheese, you can use full fat if you prefer
1/4 c. grated cheddar or colby-jack cheese, 2% milk cheese would work
1/4 c. milk
1/2 tsp. kosher salt, or to taste
freshly ground black pepper to taste
4 green onions, sliced
3 slices cooked bacon, roughly chopped
