These Enchiladas are super easy to make, and one serving has 375-400 calories so it’s a perfect option for lunch or dinner and won’t leave you feeling like you skimped on a meal.

4 cups cold water
2 cups fat-free chicken broth
5 garlic cloves, crushed
2 (6-ounce) skinless, boneless chicken breast halves
1/2 medium onion, sliced
1 cup salsa verde
1/4 cup heavy whipping cream
1 cup chopped, seeded fresh tomato
1/4 cup chopped fresh cilantro
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes
5 oz. low-fat cream cheese, softened
12 (6-inch) flour or corn tortillas
Cooking spray
2 oz. cheddar cheese, shredded (about 1/2 cup)
