2 young zuchinni
1 cup shredded mozzarella cheese
2 tbsp pasta sauce
½ red pepper, chopped
¼ c sliced black olives
4 slices salami or pepperoni

Slice the zuchinni in half lengthwise. Scoop out the middle of the zuchinni, making a boat. Save about ½ the insides.
In a mixing bowl combine the cheese, pasta sauce, chopped red pepper, black olives and the chopped up insides of the zuchinni.
Stuff each zuchinni boat with ¼ of the mixture. Top each with a pepperoni or salami slice.
Bake at 375 C for about 20 minutes or until cheese is bubbly and melted.
