Potatoes
3 medium sweet potatoes, peeled & diced into 1 inch pieces
1 tbsp coconut oil
1 tbsp reduced sugar maple syrup
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp sea salt
Toppings
1 tbsp ground flaxseed
¼ cup pecans
¼ cup unsweetened shredded coconut
¼ cup vegan mini marshmallows
