Luscious Lemon Bars

My favourite lemon bars combine buttery crust with gooey, tangy filling, that is pretty darn simple to whip up for anyone with a citrus weakness!

Shortbread crust:
1/4 cup sugar
1/3 cup salted butter
1/2 teaspoon vanilla
1 cup flour

Lemon filling:
1 1/4 cups sugar
5 tablespoons flour
1/2 teaspoon baking powder
pinch salt
3 eggs
1/2 teaspoon vanilla
2 lemons (juice & zest)
Preheat oven to 350F. In a medium bowl, mix together sugar, butter and vanilla by hand. Stir in flour and salt until combined- mixture should be crumbly but stay together when pressed in-between your fingers. Press evenly into the bottom of a greased 8x8 glass baking pan. Bake for 8 minutes. Using the same bowl, stir together sugar, flour, baking powder and salt. Add eggs and stir to combine. Add lemon juice and zest, stirring until smooth. Pour the lemon filling over the shortbread crust and bake for 25 minutes until the top and edges are golden brown (when you shake the pan the lemon filling should no longer jiggle in the centre). Let cool and slice into bars of luscious lemon goodness!
