Magnificent Minestrone Soup

A traditional blend of classic flavors that make every spoonful a delight.

24 ounces of beef stock
4 ounces of celery chopped
4 ounces of carrot sliced thin
1 pound of diced tomatoes
3 ounces of onion diced finely
8 ounces elbow macaroni
1 tablespoon olive oil
1 cup fresh swiss chard chopped
1 cup spinach chopped
6 ounces of chopped cabbage
1 ounce fresh parsley
1/2 teaspoon each of salt, black pepper, garlic salt, rosemary, thyme and oregano
In a frying pan place the olive oil, carrots, celery, onion, beef stock and cabbage, and then place on medium heat stirring occasionally for 10 to 12 minutes. When cooked place the contents of the frying pan into a soup pot along with the remainder of the ingredients except the macaroni - cover and let come to a boil on medium heat. When the mixture boils add the macaroni and simmer on low heat for another 25 to 30 minutes before serving.
