Dressing:
4 tablespoons red wine vinegar
3 tablespoons extra vrgin olive oil
1-2 tablespoons fresh lime juice
Salad:
2 cups cooked quinoa, room temperture
1 14oz can black beans, rinsed
1-2 mangoes, peeled and diced
1 red and orange pepper, diced
6 green onions, thinly sliced
1/2 cup cilantro, roughly chopped
4 tablespoons red wine vinegar
3 tablespoons extra vrgin olive oil
1-2 tablespoons fresh lime juice
Salad:
