Sweet mangoes with coconut flavored rice is a very simple and exotic dessert.

1 cup Jasmine rice
1 (13.6 oz) can unsweetened coconut milk, good quality
1/2 cup water
1/4 tsp salt
4 Tbs white sugar
2 large ripe mangoes

In a small sauce pan over low heat bring coconut milk, sugar, and salt to a slow simmer, stir constantly. Warm for about 5 minutes, just until the sugar has dissolved. Be sure not to boil.
