Maple-Balsamic Arugula Salad

1/4 cup olive oil
2 tbsp balsamic vinegar
2 tsp grainy mustard
1 tsp maple syrup
1/8 tsp salt
10 cups baby arugula
1/4 cup sliced almonds, toasted
Whisk oil with vinegar, mustard, maple syrup and salt in a large bowl. Season with pepper. Add arugula and toss to coat. Garnish with almonds. Serve with Fruity, creamy crostini.
