Maria's Cream Puffs

choux à la puff pastry...you can do so much with this recipe...you can fill them savory or sweet, the cream filling is easy for this one, it uses a box of cooked pudding...

1 cup of water
6 tablespoons of unsalted butter
1 teaspoon sugar
¼ teaspoon salt
1 cup of flour
4 large eggs

for brushing on top:
I egg yolk
I teaspoon of water

to make the filling:
one small package of cooked vanilla pudding, not instant,
1 1/2 cups of milk (do not make with the 2 cups like the package calls for)
1 1/2 cups of whipping cream
2 Tablespoons of powered sugar
Prep time: 40 minutes total Preheat oven to 400 (reduce heat to 350 after 15 minutes of baking time) Cooking Directions: In a medium saucepan, add the water, butter, sugar and salt. Bring to a boil over medium heat. Remove from the heat. Mix in the flour. It will start to turn into a paste. Put the saucepan back over low heat and mix with a wooden spoon until the dough leaves the sides of the pan to form a circle. Take off of heat...let cool slightly. Then beat in one egg at a time till it is fully incorporated before adding another egg...this might take some muscle, but the final product will be worth it, you are going to have to trust me on this one! Prepare to baking sheets with parchment paper. and spray VERY LIGHTLY with cooking oil spray... Then place 2-inch mounds of dough 2 inches apart on a baking pan. I use a bit of water on my finger to smooth out the peaks on the top that may become browner. Then beat an egg yolk with a teaspoon of water. Brush the top of each cream puff with this egg yolk mixture.
