The other night, I was totally in a dinner rut. All that I really wanted to do was just go grab some fast food and call it good. But, we had already had fast food the night before, so I knew that I needed to pull myself together and just make dinner.I started thinking about how much I love grilled chicken sandwiches from our local fast food joint, I thought about how I could easily make it myself . . . and this little number was born! This headline may sound like an exaggeration, but it's not. This recipe perfectly fuses the chicken's flavor and texture with a deep-flavored, umami-rich broth. And the best part…actually the two best parts are: It tastes like you cooked this for four hours & it takes less than an hour from start to finish.

4 chicken thighs, bone-in, skin on - about 1.5 lbs
3 Tbsp canola oil - or any neutral oil
2 c chicken stock
1/2 c red wine
3 large tomatoes, chopped
1 small onion, chopped
10 oz mushrooms, sliced
10 oz fresh spinach, chopped
3 cloves garlic, finely chopped
1/2 jalapeno, finely sliced
1 tsp tomato paste
1/4 tsp paprika
salt and freshly ground pepper
2 (plus leftovers, maybe..)

One of the most amazing things about this absolutely delicious one-pan chicken pasta dish is the consistency of the sauce.

2-4 chicken thighs, depending on size
12 oz pasta
4 c chicken stock - or 4 c water and two Knorr chicken bouillon cubes
1 Tbsp canola oil - or any neutral oil
1 tsp salt, plus salt to taste
1 tsp pepper
1/2 tsp paprika
1 shallot, finely chopped
14 oz can of diced tomatoes - or 1 c chopped fresh tomatoes
1 c chopped vegetables - I found an asparagus in the garden
4 basil leaves, shredded - that's what they call chiffonade in fancy cookbook slang
2 oz shaved Parmigiano-Reggiano - or other hard cheese
