Leftover mashed potatoes are transformed into a new and tasty dish

3 c. mashed potatoes
1 egg
1 1/4 c. panko bread crumbs, divided
3 Tbs. cream cheese (or shredded cheddar cheese)
2 Tbs. chopped green onion
1/2 tsp. + 1/4 tsp. salt (or more depending on the flavor of the mashed potatoes)
1/2 tsp + 1/4 tsp. pepper
4 Tbs. oil for frying
