Mashed Potato Salad
This is a very light but filling meal on a hot summer day. Serve with a side bowl of your favorite chilled fruit.

8 cups mashed potatoes chilled
1/2 head lettuce
1/2 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon black pepper
1 large tomato sliced thin
1 medium cucumber sliced thin
3 large eggs hard boiled, sliced
1 teaspoon paprika
1/2 cup french fried onions

On a large platter lay out the lettuce to make a bed.
Carefully spread mashed potatoes onto lettuce and form to make a large patty approximately 1" thick.
