Mediterranean Avocado Quinoa Salad

A protein-packed combination of quinoa, soft-boiled eggs, and Mediterranean yumminess.

1/2 cup red quinoa
Water
1/2 tsp salt
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 clove garlic, minced
1 tsp honey
2 eggs
6 cups spinach/arugula mix
1 avocado, diced
4 oz feta cheese, diced
1 red bell pepper, seeded and diced
