Mediterranean Chicken

A skillet meal that is hot and oh so comforting. The perfect good for you meal!

1 c brown rice, uncooked
3/4 lb. boneless, skinless chicken breasts, cut into bite sized cubes
1/2 t coarse ground black pepper
1 T olive oil
3 cloves of garlic, minced
1 c zucchini, cut lengthwise and sliced
8 oz mushrooms, sliced
1/2 c onion, diced
1 15 oz. can of diced tomatoes with juice
1 c reduced sodium chicken broth
1 T dried oregano
1/2 t salt
Cook rice according to package directions. Saute chicken in a large nonstick skillet, over medium high heat for about 4-5 minutes. Remove from pan. Add olive oil to the skillet along with the garlic. ...
