1 (16 oz) bag frozen corn ( or 3-4 cups fresh corn )
2 tablespoons olive oil
3 tablespoons mayonnaise ( I used light )

1 tablespoon jalapeno peppers ( finely chopped )
? cup fresh cilantro, finely chopped
2 tablespoons red onion ( finely chopped )
2 cloves garlic ( minced )
½ teaspoon chili powder
salt and pepper to taste
Heat oil over medium heat. Add frozen corn and let cook until corn starts to char, stirring occasionally (it took about 7-8 minutes before my corn was lightly charred). While the corn is cooking, mix together ...

This one is not only quick and healthy, but very inexpensive also! My kids love it, so we make it quite often. Sometimes getting kids to eat healthy foods can be a challenge, so I try to offer things that will appeal to them. One thing about these zucchini slices is that they are easy to eat with your fingers. You could even call them zucc

3 medium zucchinis ( sliced try to get them as close to the same width as possible )
1 tablespoon olive oil
1 tablespoon grated parmesan cheese ( more or less to taste )
1/2 teaspoon garlic powder ( more or less to taste )
