Miami Vice Bundt Cake with Cream of Coconut Glaze and Toasted Coconuts

This cake has been remixed from the drink called Miami Vice. It is a combination of half strawberry daiquri and pina colada mixtures.

Cake Ingredients:

-2 sticks of unsalted room temperature butter
-2 cups of sugar
-3 cups of sifted cake flour
-4 eggs room temperature
-1 cup milk
-3 teaspoons baking powder sifted
-1/2 teaspoon salt
-1 1/2 teaspoons vanilla extract
-3/4 cup of rum

Miami Vice Mix Recipe:

Strawberry Daiquiri Mix Ingredients:
-5 to 6 strawberries
-2 tablespoons lemon juice

Pina Colada Mix Ingredients:
-1/2 cup canned pineapple tidbits drained
-3/4 cup of cream of coconut (shake well before measuring)

Cream of Coconut Glaze Ingredients:

-1 cup of sifted confectioners sugar
-1/2 cup cream of coconut
-3 tablespoons pineapple juice

Topping:
-1/2 cup of coconuts
