Mini Blueberry Breakfast Loaf

These sweet blueberry loaves are delicious right out of the oven. They are a great alternative to blueberry muffins for breakfast or blueberry pie for dessert. You can also use regular sized loaf pans and increase cooking time to 40 minutes.

1 cup reduced-fat sour cream
1 can blueberry pie filling (21 oz)
2 large eggs
1 box white cake mix (18.5 oz)
1/4 cup granulated sugar
Preheat oven to 350 degrees. Grease 4 mini loaf pans and set aside. In a large mixing bowl, combine sour cream, pie filling, and eggs with a wooden spoon. Add box cake mix and stir gently until just moistened. Scoop batter into pans about halfway full. Sprinkle tops of batter with granulated sugar. Bake for 25 minutes or until toothpick inserted in the center comes out clean. Let loaves cool in pans for 5 minutes, then transfer to a wire rack to finish cooling. Slice and serve! Refrigerate leftovers (if any).
