For the Cupcakes;
110g Butter, softened
1 cup Caster Sugar
2 Eggs
½ tsp Vanilla Essence
½ cup Cocoa
1 cup Boiling Water
1 1/3 cups Flour
½ tsp Baking Soda
½ tsp Baking Powder
For the Frosting;
250g Icing Sugar
100g Butter, softened
1/4 cup Cocoa
2 tbsp - 1/4 cup Milk
110g Butter, softened
1 cup Caster Sugar
2 Eggs
½ tsp Vanilla Essence
½ cup Cocoa
1 cup Boiling Water
1 1/3 cups Flour
½ tsp Baking Soda
½ tsp Baking Powder
For the Frosting;
250g Icing Sugar
100g Butter, softened
1/4 cup Cocoa
2 tbsp - 1/4 cup Milk
For the Cupcakes;
Preheat oven to 180°C and line a 24 piece mini muffin tray.
Mix the cocoa and boiling water together until the cocoa has dissolved. Place in the fridge to cool.
