Mini Shredded Chicken Tacos

A fun, tasty little taco that makes a great main dish or appetizer.

9 corn tortillas (or enough to create 18 small tortillas)
1 can chicken (12.5 ounces)
About 1/2 cup Salsa Verde (any variety)
1/2 cup Mexican blend shredded cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne (optional)

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
