Scrumptiously thick and chewy brownies topped with a layer of creamy mint frosting and a layer of dark chocolate. The ultimate brownies for St. Patrick’s Day!

For the Brownies
1 cup (226g) unsalted butter
¾ cup (130g) dark chocolate, chopped
2 cups (450g) caster sugar
4 large eggs
2 teaspoons vanilla extract
1 cup (125g) plain flour
¼ teaspoon salt
For the Mint Layer
½ cup (115g) unsalted butter, softened
4 cups (500g) icing sugar
3 - 4 tablespoons milk
1 teaspoon peppermint extract
Green food colouring
For the Chocolate Layer
½ cup (115g) unsalted butter
1 and ¼ cups (220g) dark chocolate, chopped
