If you like Mint Chocolate Chip Ice Cream, you'll adore these cookies! Eat them alone, or crush them over Vanilla Ice Cream...mmmmmm mmmmm good! We like to call them Leprechaun Cookies at St. Patty's Day and Grinch Cookies at Christmas.

1/2 cup butter, softened
1/2 tsp. mint extract
7 drops green food coloring

1 pkg. Andes mints, chopped
1 cup semisweet chocolate chips

Preheat oven to 350 degrees and lightly spray baking spray onto a cookie sheet.
Mix the cookie mix, butter, mint extract, green food coloring and egg in a large bowl.
