Mint Chocolate Chip Cookies

If you like Mint Chocolate Chip Ice Cream, you'll adore these cookies! Eat them alone, or crush them over Vanilla Ice Cream...mmmmmm mmmmm good! We like to call them Leprechaun Cookies at St. Patty's Day and Grinch Cookies at Christmas.

1 pouch of sugar cookie mix
1/2 cup butter, softened
1/2 tsp. mint extract
7 drops green food coloring
1 egg
1 pkg. Andes mints, chopped
1 cup semisweet chocolate chips
