Deliciously soft, mint-infused chocolate cookies with a creamy white chocolate mint ganache filling!

2 oz dark chocolate ( 60g coarsely chopped )
1/2 cup unsalted butter ( 115g softened )
1/4 cup sugar ( 50g )
1 large egg yolk
1/2 teaspoon vanilla extract
1 teaspoon peppermint extract
1 cup plain or all purpose flour ( 125g )
1/2 cup cocoa powder ( 50g )
1/4 teaspoon salt
1/2 cup granulated sugar ( 100g for coating )
2 oz white chocolate ( 60g coarsely chopped )
2 tablespoons heavy cream
1/2 teaspoon peppermint extract
