Miso Glazed Mahi Mahi is a healthy way to make a great fish dish

4 pieces mahi mahi (about 3-4 ounces each) or white fish of your choice
1 tsp. pepper
Salt to taste
1/2 c. miso paste
1/3 c. orange juice
1/4 c. rice wine vinegar
1 Tbs. orange zest (optional)
Preheat oven to 400 degrees. Place the 4 pieces of mahi mahi in a baking dish. Sprinkle with pepper and salt if using. In a small bowl, mix the miso paste, orange juice and rice wine vinegar. Divide
