Moist Applesauce Muffins

These muffins are an easy breakfast or snack to whip up for your family. I avoid filling the muffin cups too full, and as a result I usually get 14 muffins instead of 12. They freeze really well, too - just reheat in the microwave and enjoy!

1 stick margarine, softened
1 cup white sugar
1 egg
1/2 tsp vanilla extract
1 cup applesauce (no sugar added)
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp allspice
2 cups all-purpose flour

Preheat oven to 350. Grease muffin pan or line with paper baking cups. With an electric mixer, beat margarine and sugar in a medium bowl until creamy. Beat in egg and vanilla. Add applesauce, baking soda, cinnamon, and allspice and stir well. Carefully stir in flour until it is just moistened. Divide batter into baking cups. Bake for 15 minutes; turn pans 180-degrees and bake an additional 5 minutes. Allow muffins to cool in pan for a few minutes before transferring to a wire rack.
