Mom's Apple Breakfast Muffins

Yummy, Moist Apple Muffin. Great for breakfast or a nutritious afternoon snack.

1 Cup Oats
1 Cup Milk
1 Tbsp. lemon juice

3/4 Cup flour (white or whole wheat)
1/2 tsp. baking powder
2/3 tsp. baking soda
2 Eggs slightly beaten
1/2 Cup brown sugar (packed)
1/2 Cup organic coconut oil (or 6 Tbsp. melted butter)
2 tsp. vanilla extract
1 Cup diced apples, no need to peel ( approx 4)
Heat oven to 325 degrees. Place racks in center of oven. Prepare 2 muffin pans with liners. Place 1 Tbsp. lemon juice into measuring cup, add 1 Cup milk. Let sit for 2 minutes. In large bowl add Oats...
