Mom's Chicken and Rice

3

One of my favorite comfort foods growing up was my mom's chicken and rice. It's a quick, easy recipe to throw together with ingredients you already have in your fridge and pantry. It goes great with salad or your favorite veggie.

4
2 Tbsp butter

4-6 chicken breasts

1 small onion, finely chopped

1 ¼ c uncooked rice

1 tsp salt

¼ tsp pepper

2 ½ c water
1) Melt the butter in a frying pan and begin frying the chicken on medium-high heat, turning every few minutes until nicely browned on both sides. 2) Add the onion and continue to fry, stirring occasionally, until onions are crispy brown. 3) Add all the other ingredients, mix well, and cover. Turn heat to low and simmer (without any stirring) for 20-30 minutes until the water is absorbed.

Marinated Taro Root

642

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)
3
  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
