Muffin Pan Corn Dogs

My kids love store bought corn dogs and I had been looking for a way to make these myself. I figured, what the heck, I make my own corn bread, why not make muffins. It was a great night because 2 of the 3 kids were uber excited that these were part of our quick dinner menu. If these aren’t gourmet enough go ahead and add a dab a chili, cheese and sour cream to fancy it up.

6 hot dog cut in quarters
3/4 cup corn meal
1 1/4 cup of flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg beaten
1/4 cup vegetable oil

Preheat oven 400 F
Mix all the ingredients together except the hot dogs
Take a greased muffin pan and place approximately 1/4 cup of batter in each place.
Then place cut up hot dogs in the cups with batter....
