Mustard Roasted Potatoes

I love mustard. No, I don't think you understand....I LOVE MUSTARD! The tang, the bite, the FLAVOR it adds! These potatoes are perfect with grilled or broiled steak and are so easy to put together.

2 1/2 lb. yukon gold potatoes, cut in 2" pieces
2 yellow onions, sliced
2 T. extra virgin olive oil
2 T. whole grain mustard
1 t. salt, plus more to taste
1 t. pepper
