My Babci's Simple Bigos

Bigos, a Polish stew consisting of meat and cabbage, has always been a favorite in my family. While this traditional Polish stew often has a few different meats in it, my Babci (that's Polish for Grandma) preferred to make it simple by using kielbasa and salt pork as the only meats. Sometimes the simplest foods are the most delicious!

4 oz salt pork, finely diced
1 head cabbage, shredded
1 lb kielbasa, sliced then halved
2 (8 oz) cans tomato sauce
1/2 tsp salt
1/4 tsp pepper
Render salt pork in a large soup pot. Add cabbage and coat with rendered salt pork. Add remaining ingredients. Simmer until cabbage is soft and kielbasa is cooked through, approximately 20 minutes.
