My Favourite Chocolate Chip Cookies

These cookies are so soft, chewy and thick, and stuffed full of melting chocolate chips – my all-time favourite chocolate chip cookies!

1/2 cup (115g) unsalted butter
1/2 cup (100g) caster sugar
1/4 cup (50g) light brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups (250g) plain flour
1 teaspoon baking powder
1 teaspoon cornflour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup (175g) chocolate chips (and some extra for topping)
