No Bake Chocolate Oatmeal Macaroons

These are great for little beginner cooks or those without an oven. Only a pot needed and some waxed paper. You can substitute the coconut for Rice Krispie cereal or whatever you fancy. Very popular with my youth group. Makes 3 dozen.

1 1/2 cups sugar
3 Tbsp coca powder
1/2 cup milk (or cream)
1/2 cup butter (or shortening if you must)
3 cups oats
1 cup coconut
1 tsp vanilla extract
1/4 tsp salt

1/4 tsp salt
Combine sugar and cocoa in a saucepan. Add milk slowly. Stir over low to med heat until sugar dissolves. Bring to a boil. Add butter and oats and stir with a wooden spoon, briskly. Cook for 2 minutes, stirring constantly.
Remove from heat. Add coconut, vanilla and salt.
Stir well and drop in spoonfuls onto waxed paper. Allow to set. (Sometimes I speed this up by putting them in the fridge for 5 mins). Yum!
