A light & healthy no bake cookie filled with dried fruit, coconut and oatmeal

¾ cup unsweetened shredded coconut (King Arthur)
¾ cup dried apricots
1 cup dried mango (I used Sunsweet) or pineapple
½ cup dried cranberries (reduced sugar) or cherries
½ cup sliced raw almonds
½ cup quick cooking oats
Place coconut, apricots, mango and cranberries in a food processor. Process for 1 minute. Add almonds and oats. Process for another minute. Using a tablespoon, pack the mixture hard into it. ...
