Scrumptiously creamy no-bake white chocolate cheesecake infused and topped with fresh raspberry sauce and whipped cream!

For the Raspberry Sauce
1 and 1/4 cups (150g) fresh raspberries
2 tablespoons water
1/2 cup (100 g) caster/granulated sugar
2 tablespoons cornflour/cornstarch
For the Crust
2 and 1/2 cups (250g) digestive biscuit/graham cracker crumbs
1/4 cup (50 g) caster/granulated sugar
1/3 cup (75 g) unsalted butter ( melted )
For the Cheesecake
1 and 1/2 cups (360ml) heavy cream
1 cup (125 g) icing/powdered sugar
1 teaspoon vanilla extract
24 oz (680 g) cream cheese ( softened )
1/2 cup (100 g) caster/granulated sugar
1 and 1/2 cups (265g) white chocolate, melted
For the Swirls
3/4 cup (180 ml) heavy cream
1/3 cup (40 g) icing/powdered sugar
