Not Your Mom's Chicken Salad

Quick and easy chicken salad recipe. Another great way to use a rotisserie chicken!

1 Rotisserie chicken
1/2 cup of shredded cheese (we used cheddar)
1/2 cup pickle relish
1/2 cup mayo (I used Kraft’s Olive Oil mayo)
1 cup broccoli slaw
1 cup grapes, sliced in half
1 garlic clove, pressed
Take all of the meat off the rotisserie chicken and pull apart into small pieces. Combine all ingredients in a bowl and service as a sandwich or on crackers.

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
