Oatmeal Cranberry White Chocolate Breakfast Cookies

You heard correctly... cookies for breakfast! Sounds too good to be true, right? Well, think again. This simple oatmeal cookie is the perfect food to grab for a healthy breakfast on-the-go, or just to satisfy a sweet tooth any time of day.

2/3 cup butter
2/3 cup brown sugar
2 large eggs
1 tsp. vanilla extract
1 1/2 cups instant oatmeal
1 1/2 cups whole-wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 1/4 tsp. cinnamon
1 5oz. package dried cranberries
3/4 cup white chocolate chips
Beat butter, sugar, and vanilla together in a large mixing bowl until smooth. Add eggs one at a time, beating thoroughly after each addition. In a separate bowl, mix together all of the dry ingredients (except the cranberries and chocolate chips). Slowly add the dry ingredients to the large mixing bowl. Comine thoroughly. Stir in cranberries and white chocolate chips. Drop batter by rounded spoonfuls onto a cookie sheet covered with parchment paper. Cookies will not spread much during the baking process so they can be placed close together. Cook at 375 degrees for 8-10 minutes. Makes approximately 60 cookies.
