Oatmeal Crispy Candy Cookies

Crispy on the outside, chewy on the inside...with a candy surprise in the center!

1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla extract
1/2 tsp. almond extract
3/4 cup flour
1 1/2 cups old fashioned oats
1/2 teaspoon salt
1/2 teaspoon baking soda
Mini candy bars
1. Cream the shortening and sugars. 2. Mix the egg, vanilla, and almond extract. Add to the sugar mixture and mix well. 3. In a separate bowl, combine the flour, oats, salt, and baking soda. Add to wet ingredients and mix well. 4. Cut your mini candy bars in half. 5. Form the dough into small balls. Flatten the balls and place the 1/2 mini candy bars in the center. Form the dough around the candy and roll between your palms to create a small ball. 6. After you have rolled all the dough balls (about 20), place in the fridge to chill for about 1 hour. 7. Preheat your oven to 350 degrees Fahrenheit. Place dough balls on a greased cookie sheet at least 2 inches apart (cookies will spread during baking). Bake for 10 minutes or until golden brown. 8. Enjoy warm from the oven with a cold glass of milk!
