O'Henry Chocolate Oatmeal Bars

I seriously have no idea why I have never heard of these before!! I am all about simple recipes with few ingredients and these fall perfectly in that category. I whipped them up in about 20 minutes and they were a huge hit! My kids also helped me make them from start to finish, so if you need a fun project with your kids, this is for you!

4 cups quick oats
1 cup butter, softened
1 cup brown sugar
1/2 cup white sugar
1 cup milk chocolate chips
1 cup smooth peanut butter

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
