Old Fashioned Granny Smith Pancakes

Taste melt in your mouth old-fashioned goodness when you bite into these fluffy, sweet pancakes with a hint of tartness.

3 cups all-purpose flour
7 teaspoons baking powder
1 teaspoon salt
2 tablespoons white sugar
6 tablespoons melted butter
2 eggs
2 1/2 cups milk
cooking spray (optional)
1 large granny smith apples peeled, and cut into small pieces
1. Sift together flour, baking powder, salt and sugar in a large bowl. 2. Whisk in melted butter, eggs and milk until combined. Let batter rest for 5 minutes. 3. Preheat a large skillet or pan over medium-high heat. Spray with cooking spray if necessary. 4. Pour batter onto hot skillet, using about 1/4 cup batter for each pancake. Cook for 2-3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1-2 minutes. 5. Best served with real maple syrup.
