Old Fashioned Red Velvet Cake

This recipe came from my grandma's recipe box, and it's a family favorite. Moist and flavorful with just the right dense but airy texture, this cake is simple to make and is sure to please!

1/2 cup plus 1 Tablespoon shortening
1-1/2 cups granulated sugar
2 eggs
2-1/4 cups all purpose flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons cocoa
2 oz. red food color
1 teaspoon vanilla extract
1-1/4 cups buttermilk
1 teaspoon distilled white vinegar
1-1/2 cups granulated sugar

2-1/4 cups all purpose flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons cocoa
2 oz. red food color
1 teaspoon vanilla extract
1-1/4 cups buttermilk
1 teaspoon distilled white vinegar
Preheat oven to 350°F. Grease and flour two 8 or 9 inch cake pans.
Cream together shortening and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Set aside.
In a small bowl, combine cocoa and food color till well mixed. Add to the creamed mixture.
Sift together flour, salt, and baking soda. Add to the creamed mixture alternately with the buttermilk, mixing well after each addition and scraping down the sides of the bowl often. Add vanilla and mix. Stir in vinegar.
Bake for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cool and frost as desired.
