P.F. Chang's Chicken Lettuce Wraps copycat

A great copy-cat recipe of one of my favorite Chinese appetizers!

Ingredients:
2 Tbsp oil
1 cup water chestnut, finely chopped
2/3 cup mushroom
3 Tbsp chopped green onions
1 tsp minced garlic
1/2 red bell pepper, finely chopped
2 tsp minced fresh ginger
5-6 leaves iceberg or bib lettuce

For the marinade:
2 boneless skinless chicken breasts, minced or chopped in small pieces
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sesame oil

For the Stir Fry Sauce
2 ½ Tbs soy sauce
1 Tbsp rice vinegar
1 tsp sugar
1 tsp sesame oil
1 Tbsp hoisin sauce
1 tsp cornstarch

For the Special Sauce:
1/4 cup sugar
1/2 cup water
2 Tbsp soy sauce
2 Tbsp rice wine vinegar
1 Tbsp hoisin sauce
1/4 tsp lemon juice
1 tsp sesame oil
1/4 tsp garlic powder
1 Tbsp dijon or hot mustard
2 tsp water
1/2 tsp garlic and red chile paste
