I love Mexican food. It’s definitely one of my all-time favorites, as evidenced by these tacos, these enchiladas. & this salsa. I’ve done crazy things like turning pasta into a Mexican dish & since trying to eat more healthy, I’ve subbed the chips in nachos for these bad boys. Cauliflower Paleo Rice
2-3 Chicken breasts, sliced
2 tbsp olive oil, divided
1 lime, divided
1 tsp chili powder
1/2 tsp cumin
Salt & pepper
1 onion, chopped
1 bell pepper, chopped
1/2 cup cilantro, chopped
Cheese, grated
1 Avocado, sliced
Salsa
Sour cream or Greek yogurt
