FOR THE COOKIES:
1 1/2 cups almond flour (Bob's Red Mill)
1/2 cup arrowroot starch/flour
1/8 teaspoon salt (optional)
1/4 cup honey
3 tablespoons Earth Balance (Soy-Free or Coconut Spread)
1 tablespoon vanilla extract
1 tablespoon almond milk, plain
FOR THE VANILLA FROSTING:
2/3 cup Spectrum Shortening
1/4 cup honey
1 tablespoon vanilla extract (clear for lighter color)
1/3 cup egg white powder (Hoosier Hill Farms)
2 1/2 tablespoons arrowroot flour/starch
1/8 teaspoon salt
FOR THE CHOCOLATE FILLING:
6 pieces Baker's Chocolate, unsweetened. (1.5 ounces)
1/2 cup + 1 Tbsp Earth Balance Soy-Free Spread or Coconut Spread
1/3 cup honey
1 tablespoon vanilla extract
2 1/2 tablespoons egg white powder (Hoosier Hill Farms)
1 1/2 tablespoons cocoa powder
1/8 teaspoon salt
