This delicious sandwich is MADE for picnics! You allow all the juices to soak into the bread before you eat it. Pan Bagnat is the essential picnic Sammie!

1 baguette
1 clove garlic
1/3 cup reduced fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon extra virgin olive oil
2 tablespoons tarragon vinegar
2 teaspoons dried basil
2 teaspoons dried parsley
1 small head butter lettuce, torn
1 medium red onion, thinly sliced
1 large tomato thinly sliced
1 cup sliced roasted red peppers
1 cup chopped, marinated artichoke hearts, drained
1/2 cup chopped kalamata olives
4 large hard boiled eggs, sliced
10 ounces tuna in water, drained

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
