Pan-Roasted Asparagus with Meyer Lemon Mascarpone

I love all veggies and don’t really need a big glob of cheese or heavy sauce on them for me to like them– oh don’t get me wrong, I don’t mind a big glob of cheese or sauce most of the time…but this Meyer lemon mascarpone is really light and creamy- not heavy at all– and so easy to make.

1 cup mascarpone cheese
2 Meyer lemons, juiced
3 teaspoons Meyer lemon zest, divided
1 large bunch asparagus, washed and trimmed and dried
2 teaspoons butter
1 teaspoon vegetable oil
salt to taste
Make the Meyer lemon mascarpone. Mix mascarpone with Meyer lemon juice and 1 teaspoon of the zest. Set aside. The mascarpone with become a strange consistency but when on the asparagus it will become melty...
