PANKO CHICKEN BLT PENNE SALAD

A delicious Panko Chicken BLT salad with pasta and 2 kinds of lettuce, avocado, grape tomatoes, red onion, toasted walnuts, cranberries, blue cheese, and a balsamic fig vinaigrette. A summer salad made even better!

8 pieces Baked Panko Chicken Tenders recipe or grilled chicken
3 cups young arugula leaves, rinsed, dried and torn
3 heads Bibb lettuce, rinsed, dried and torn
5 slices Bacon cooked, crumbled and cooled
¼ cup dry penne rigate pasta, cooked al dente and cooled
½ cup chopped toasted walnuts
¾ cup grape tomatoes, halved
½ cup dried cranberries
¼ red onion, cut into thin slices
½ red bell pepper, diced
½ yellow bell pepper, diced
1 avocado, diced
½ cup crumbled blue cheese
¾ cup balsamic fig dressing (I used Stonewall Kitchen)
Have Baked Panko Chicken recipe ready (or grilled chicken) and cut into pieces. Place lettuces and next 10 ingredients in a large bowl. Pour in the balsamic fig dressing and toss all together. Serve immediately.
