Confession: I hate eggs. I know, sacrilege. But it's true. Fried, scrambled, over easy or sunny-side-up I just can't choke em down when they stand alone. I even struggle with quiche and fritatas. There is just one egg dish that seems to agree with me and it is our Papitas Breakfast Bombas. I found a recipe similar to this one on Pinterest one day and ever since then hundreds of variations have popped up. Our PBBs are so simple to make just tater tots, eggs and salsa. It's a great

12 cup cupcake baking tin
6 eggs
36 tater tots (3 per cupcake tin)
1 cup of freshly chopped salsa (you can use tinned as well but we prefer fresh, just chop up some tomato, onion, cilantro and jalapeño and toss it with some salt, pepper and lime juice)
1/2 cup of shredded cheddar-jack cheese + 2 tbsp reserved
salt and pepper to taste
