Paprika Chicken

I learned to cook this dish from a good friend who lived in Hungary for a while. He came home and cooked this for us and I have been hooked ever since!

2 chicken breasts cut into 1” cubes
1 large onion finely chopped
2 ½ T. oil
1 t. paprika (more or less to taste)
pinch of salt
2-3 bell peppers (I prefer yellow, red and green)
1 large tomato diced
1 small jalapeno finely diced
8 oz. sour cream
1. Heat oil in cooking pan over med heat. 2. Add diced onion and gently cook, stirring occasionally. Remove from heat and stir in paprika. 3. Add the chicken pieces and fry over high heat for several minutes, stirring frequently. Reduce heat, season chicken with the salt and cover with a lid for 5-7 minutes. 4. Remove seeds from bell pepper and slice into rings or chunks depending on preference. Add peppers and diced tomato. 5. Add jalapeno based on level of kick you desire. If you like heat, add the whole pepper. Add half for not so much of a kick. 6. Simmer until vegetables are softened. 7. Add sour cream and stir. 8. Serve over rice or egg noodles
